The objective of this scientific experiment is to extract pigments from different foods. In addition, participants will learn what is pH and how to determine it in different substances through an extract of red cabbage.

The objective of this scientific experiment is to extract pigments from different foods. In addition, participants will learn what is pH and how to determine it in different substances through an extract of red cabbage.

Fruits and vegetables have a wide variety of components that are beneficial to human health, among them the pigments that grant them their characteristic colours. The pigments, such as carotenoids or flavonoids, stand out for their antioxidant activity, which makes fruits and vegetables great allies against numerous pathologies. In addition, its extraction is simple using solvents such as ethanol or acetone.

Through simple experiments, participants will be able to see and carry out the extraction of various pigments using different sources. They will also carry out a chromatography with filter paper to separate some pigments. Furthermore, they will learn what pH is and how it can be easily determined by changing the color of one of the red cabbage pigments, anthocyanin. Thus, attendees will be able to interactively determine the pH value of various solutions and become familiar with the concepts of alkalinity and acidity of substances.
